Parmesan Potatoes

Ingredients

4 potatoes

1/4 cup butter melted (50 mL)

1/2 cup freshly grated Parmesan cheese

(125 mL)

Directions

Peel potatoes. In saucepan, in small amount of boiling water, cook potatoes for 25 min. or just until fork tender but still firm. (don't overcook); drain. Remove from sauce[pan with tongs to keep potatoes whole. Let stand until cool enough to handle. With sharp knife, slice halfway into top of potato at 1/4 inch (5 mm) intervals. (Potatoes can be prepared ahead up to this point. Increase baking time to heat through.)

Arrange potatoes on buttered baking pan. Brush with melted butter and sprinkle with cheese.

Bake in 425 F (220 C) oven for 20 min. or until potatoes are golden.
